Produced by milling the whole buckwheat grain and sieving off some of the outer husk. Then both the inner kernel (groat) and remaining husk is milled into a flour.
Despite its name Buckwheat is is not actually related to wheat. It's a seed not a grass or a legume, and is botanically related to rhubarb. Because its seeds are eaten it is referred to as a pseudocereal. Buckwheat returns nitrogen to the soil therefore organic farmers often use it as a green manure crop rotating it with cereal grains like wheat. The starchy endosperm is white and makes up most or all of buckwheat flour. The seed coat is greenish tan, which darkens buckwheat flour. The hull is dark brown or black, and some may be included in buckwheat flour as dark specks. It gives a delicious and distinctive flavour to sweet and savoury baking.

Produced by removing the firm outer husk then roller milling the inner kernel of grain and sieving out the bran. The end product makes for an easy digestible food when baked. Retains a substantial proportion of spelt's nutrients, although some of the dietary fibre is lost from removing the bran. High in nutrition and has a nutty flavour.
Spelt (Triticum spelta) is an ancient hulled wheat (aka a 'glume wheat') that has been cultivated since 5000BCE. It has a nuttier flavour than standard flour. Due to the hull protecting it, the grain is resistant to environmental and ecological damage during its entire growth phase. Although a relative of common wheat it has undergone little change via breeding processes over the millennia. Oats are a cool climate grain, our variety is a naked (husk less) oats. The downside is that it requires plenty of moisture, demands better soil quality. They have an extremely good flavour and good healthy content which is higher than from most cereals. Oats are high in Iron and calcium. Our energy content is 15.3 [normal 12]. Our protein is 12.8 [normal 10.7].

We roll our oats fresh on demand, cold rolled oats are not heat treated so all the goodness is retained and should be consumed in 3 month period, kept in a cool dry dark storage.
